Kelly's Jerk Chicken

Spicy Jerk Chicken with coconut rice and beans

Ingredients

Chicken Recipe

  • 4-6 pieces Chicken thighs (1 package is usually 4 thighs)
  • 1/2 bottle Jerk seasoning (Hot & Mild)
  • 1 Lime or Lemon
  • 3 tbsp Olive Oil
  • 1 shake Onion Powder
  • 1 shake Paprika
  • 1 shake Black Pepper
  • 1 pinch Salt to taste
  • 1 gallon ziplock bag

Rice Recipe

  • 1.25 Cup Any kind of rice
  • 1 Can Red Beans
  • 1 Can Coconut Milk
  • 1/2 Red or Yellow Onion diced into small pieces
  • 2 whole Green Onions don't cut up
  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • to taste Salt & Pepper

Extra Sweet Sauce Recipe

  • 1-2 tbsp Jerk seasoning
  • 2-3 tbsp Ketchup
  • 1/4 cup Water
  • 2-3 tbsp Brown sugar (you can use honey too)

Instructions

Chicken Recipe

  • Put the chicken in a bowl with cold water and wash chicken with the  lime or lemon juice after cutting out any unwanted fat from the chicken
  • Then season with all the above ingredients. Let it sit for about 1-2 hours (note the longer the better so it can be overnight) in the fridge in a ziplock bag and massage all the seasonings till all the meat is coated with all the seasonings.
  • Coat the pan with some oil first.  cover the pan with foil. Cook the chicken in an oven at 350 deg for 45 min.  Check it for doneness
  • After after 45 min raise the temp to 375 and remove the foil and cook more for 10-15 min max to get some color.

Rice Recipe

  • Take the rice and put in a bowl with cold water to wash it, and rince with a strainer. Then repeat that again.
  • Add oil to pot and cook diced red onion for 2-3 minutes
  • Add in the beans with their water and cook for 5 minutes medium heat.
  • When it bubbles, add in your washed rice follow with your can of coconut milk and add salt and pepper with 2 tespoons of butter
  • Stir all and cover with foil and then a lid for the pot and cook for 20-25 minutes on very low heat!
  • Every 5 min, check the rice and stir the pot so it does not stick to the bottom

Extra Sweet Sauce Recipe

  • While the rice is cooking, mix the jerk seasoning, the ketchup, and brown sugar in a pan.
  • Taske and adjust sugar if too spicy
  • cook on stove top till it bubbles (5-8 min max) and is thick
  • let cool in pan
