I got this recipe from my mom this past summer. It’s a super yummy way to get veggies into your meals without it feeling like you are eating a bunch of veggies (I have a picky family)

I’ll add pictures once I make this myself and then will make adjustments to the recipe

Zucchini- Quinoa Salad

Ingredients

  • 2 medium zucchini grated
  • 2 ears corn
  • 1/2 cup Quinoa
  • 1 cup water
  • 1/4 bulb red onion chopped
  • 2 tbsp jalapeno peppers in jar (Optional)

Dressing

  • 2 tbsp rice vinegar
  • 1/3 cup mayonaise
  • 2 tbsp olive oil

Instructions

  • add quiona and water in a pot and cover and bring to boil, then let simmer for 15 min
  • Grate the zuichinis and put in a bowl
  • finely chop the red onion and add to the zuichini
  • boil the ears of corn for 4 min and let cool. Then cut the kernels off of the cobs
  • Mix the dressing together to taste
  • chop up jalapenos and add. Adjust to taste
  • When quiona is done let it cool and then mix all ingredients together
