I got this recipe from my mom this past summer. It’s a super yummy way to get veggies into your meals without it feeling like you are eating a bunch of veggies (I have a picky family)
I’ll add pictures once I make this myself and then will make adjustments to the recipe

Here is the Recipe:
Zucchini- Quinoa Salad
Ingredients
- 2 medium zucchini grated
- 2 ears corn
- 1/2 cup Quinoa
- 1 cup water
- 1/4 bulb red onion chopped
- 2 tbsp jalapeno peppers in jar (Optional)
Dressing
- 2 tbsp rice vinegar
- 1/3 cup mayonaise
- 2 tbsp olive oil
Instructions
- add quiona and water in a pot and cover and bring to boil, then let simmer for 15 min
- Grate the zuichinis and put in a bowl
- finely chop the red onion and add to the zuichini
- boil the ears of corn for 4 min and let cool. Then cut the kernels off of the cobs
- Mix the dressing together to taste
- chop up jalapenos and add. Adjust to taste
- When quiona is done let it cool and then mix all ingredients together
