Jotting this down before I lose it. I’ll turn this into a printable recipe later. You can add meat to this to make it a main dish, or leave out the protein and have this as a side dish.
Ingredients:
1 head Boston Lettuce, Romain, or Mixed Greens
1/3 cup red onion chopped fine
1/4 cup dried cranberries
3/4 cup Apples or Strawberries cut up
1 cup Cucumber diced up. I prefer English Cucumber
1/3 cup candied pecans, or toasted almonds, or other nuts (optional)
1 cup cut up turkey, ham, or chicken (optional)
Balsalmic dressing:
1 cup extra virgin olive oil
1/3 cup balsamic vinegar
ground pepper
salt to taste
1 tsp honey (optional)
